Ricotta, Raspberry and Lime Cruskits

Looking for breakfast inspiration? Have you ever tried ricotta before? Compared to other cheeses, ricotta is relatively low in salt and fat and can be a good option as a spread for Cruskits. Mixed with a few other ingredients and topped with a few berries, it tastes a bit like a healthy cheese cake!

  • Prep: 5 Minutes
  • Portions: 2 Cruskits

Ingredients:

  • 2 Cruskits (or other crispbread of choice)
  • 2 tbsp ricotta
  • Juice and zest of 1/2 lime
  • 1/2 tsp vanilla essence
  • 1 tsp desiccated coconut
  • 2 tbsp frozen raspberries, defrosted

Method:

  1. In a small bowl, mix the ricotta, lime juice and zest, vanilla essence and coconut until combined
  2. Spread 1 tbsp of the ricotta on each Cruskit and top with the raspberries
