Ricotta, Blueberry and Lemon Cruskits

With nearly 10g of protein per 100g, ricotta is a good protein rich spread for Cruskits that is lower in fat and salt than many other cheeses. Served with a milky coffee or glass of calci trim milk either 30 minutes before or after, you’ll be getting close to your 20g of protein with this start to your day.

  • Prep: 5 Minutes
  • Portions: 2 Cruskits

Ingredients:

  • 2 Cruskits (or other crispbread of choice)
  • 2 tbsp ricotta
  • 2 tsp lemon juice
  • 1 tsp lemon zest
  • 1/2 tsp vanilla essence
  • 1/4 tsp ground cinnamon
  • 1 tsp sliced almonds, toasted
  • 2 tbsp frozen blueberries, defrosted

Method:

  1. In a small bowl, mix the ricotta, lemon juice, lemon zest, vanilla essence and cinnamon until combined
  2. Spread 1 tbsp of the ricotta on each Cruskit and top with the sliced almonds and blueberries
