Eggs, Salmon and Greens

A simple nutritious meal which is loaded with protein and healthy fats to keep you feeling fuller for longer. The importance of fibre is not forgotten with a generous serve of spinach alongside. If you are in the earlier stages post op, you may like to half the recipe and take a small amount of each component to get all the flavours on a smaller scale.

  • Portions: 2 Portions

Ingredients:

  • 2 eggs
  • 1 tsp olive oil
  • 1/4 red onion, diced
  • 2 big handfuls baby spinach leaves
  • 100g smoked salmon slices

Method:

  1. Fill a small saucepan halfway with water and bring to a simmer. Once simmering, gently lower the eggs into the pan and cook for 7 minutes (for soft boiled)
  2. While the eggs are cooking, heat the oil in a small frying pan and cook over a medium heat until softened. Add in the spinach and cook until just wilted. Set aside
  3. Once the eggs are cooked, run the pan under cold water to cool then peel the eggs and slice in half
  4. To assemble, arranged the smoked salmon, spinach and eggs on a plate and serve with a crack of ground black pepper to taste
