Apple & Berry Bircher Muesli

This bircher muesli is perfect for taking to work and helps with organisation for breakfast. In the winter fresh strawberries can be replaced with frozen berries of choice.

  • Prep: 15 Minutes
  • Portions: 3 Cups

Ingredients:

  • 2/3 cup rolled oats (not the wholegrain variety)
  • 1 tbsp dried currents
  • 1 tbsp sliced almonds
  • 1 tbsp sunflower seeds
  • 1tbsp pumpkin seeds
  • 1 tsp cinnamon, plus extra to serve
  • 250ml unsweetended soy milk
  • 1 tsp vanilla essence
  • 1 small Jazz apple, grated (skin on)
  • 200ml unsweetended liquid yoghurt
  • 2-3 fresh strawberries, sliced to serve

Method:

  1. Mix the rolled oats, currents, almonds, seeds and cinnamon together in a bowl to combine
  2. Mix the soy milk and vanilla essence together, then pour on top of the oat mix
  3. Add the grated apple and stir to combine
  4. Cover and refrigerate over night
  5. Prior to serving, add the liquid yoghurt and stir to combine
  6. Serve in small bowl or ramekin depending on your stage post-op. Top with a sprinkle of extra cinnamon and sliced strawberries
